So yummy! Vegetarian friendly and some great protein in here!
Recipe: Black Bean Quesadillas
1 tortilla, I used Ezekiel sprouted tortillas, you find them in the frozen section
1 can of no salt added black beans, rinsed!
low-fat mexican cheese blend, I used weight watchers
diced onions and green peppers, (sautéed first!)
oil, I used an olive oil spray
some fresh sliced avocado
fresh roasted salsa (optional)
So mix up the beans, cheese, onions, and peppers in a bowl. Then lay out your tortillas and fill them up with desired amount of bowl mixture.Fold tortillas in half.Spray a skillet with the olive oil spray, or just use some canola oil, whatever you have.You’ll want the skillet on a low-medium heat.Place quesadilla on skillet, about 2 minutes each side, so the cheese is nice and melted.Don’t forget to flip it for the other side!Easy as that!Serve with avocado and salsa on the side.
Delicious and super easy way to eat clean. All in all, takes about 10 minutes to cook. Try it out and let me know what you think!
